In the A. R. Valentien kitchen, Chef Jeff Jackson directs a “market driven, seasonal approach” to procuring, preparing, and serving the best food available in the San Diego region. Using to advantage the abundance of independent small farms and orchards as well as local small fish and seafood companies, Chef Jackson’s artisan menus focus on the natural flavors and textures of superb foodstuffs.
Chef Jackson and Chef Timothy Kolanko, Chef de Cuisine, known for the Artisan Table dining experience where guests share a communal table and are served truly excellent dishes family style in this relaxed, intimate setting. The Artisan Table is offered each Thursday evening by reservation. Once each month, the Thursday evening dinner party expands to showcase California’s premier wineries at The Artisan Table Winemaker’s Dinner.
